Specialized kneading machines are used in the professional bakery. They have a capacity of several hundred kilograms of flour and a several kilowatt drive motor. The tub is often mobile, so that one machine can work with several vats. The dough hook can be folded up to retract and extend the tub or to operate it. When kneading, the tub and hooks are closed with a safety lid: if the lid is lifted, the motor stops. The motor can be operated at different speeds and controlled by a timer.Kneading machines are also available for other applications and fields of application.
