Milk - more than just cow Although milk, here in Germany, is usually associated with the cow first, it is much more than that on closer inspection. Milk is generally the name given to the nutrients of mammals, but in the case of all types of milk that do not come from cows, the animal names, such as goat's milk, sheep's milk or buffalo's milk, must be explicitly indicated. In European trade,"milk" may only be used in connection with cow's milk. Although the ingredients are basically the same, the exact proportions differ depending on the animal from which the milk originates. Carbohydrates and vitamins as well as proteins and trace elements form the central ingredients.Milk is an important component of a large number of foods. It is differentiated whether milk is used in production without treatment (raw milk, raw milk cheese) or whether the products are obtained from treated milk. Examples of this are long-life milk products such as condensed milk, milk powder but also homogenised and pasteurised milk. Other important applications are in the production of quark, cream, butter, cheese, yoghurt and sour cream.It shows that even if milk is perceived at first glance only as cow's milk, it is nevertheless a central component of a wealth of everyday foods and products due to its many possible uses, uses and production.
