Description

All types of cream-filled flat or hollow wafers are produced on semi or fully automatic production lines. After mixing, the dough is poured onto baking plates and baked into wafer sheets. The gas or electrically heated baking ovens are equipped with 12 to 176 pairs of baking plates depending on the desired capacity. The hot wafer sheets are cooled down to room temperature and transferred to the spreading machine. There they are spread with cream and joined together to form wafer blocks. In the case of chocolate-coated products, the leaves are first enriched with moisture ("conditioned") to prevent the chocolate coating from chipping off later. The finished, cream-filled wafer blocks are cooled and processed into slices in the cutting machine. Afterwards the transfer to a packaging machine or to a chocolate enrobing plant takes place.

Wafer Production Systems
Today, companies in the food sector use so-called wafer production plants, depending on the product area. With these machines it should be possible to produce waffles for pastries and other snacks faster and also to make them to measure. In addition to simple wafers, the systems can also produce specialities such as Belgian waffles and Manner slices. The main difference lies in the moulds used The wafer production plants are used in several industries today and the largest customers are still companies that produce food and confectionery. These often have several production plants and areas in which the machines are only part of the stock. In the production lines there are among other things still plants which produce the dough for the waffles and pour it into the moulds, but also applications such as filling are not uncommon. The most important components of the wafer production plants therefore also include the areas of dough production, filling plants and packaging, which in some cases run in the form of a line and are also checked by continuous quality control and guarantee consumer safety.
